The Masterbuilt smoker does not smoke on its own. You can smoke whenever you want and at any temperature by adding smoke wood. For example, a pellet smoker smokes most below 120 degrees (248F) and much less above that. Wood above 120 degrees no longer smoulders but burns and then hardly emits any smoke. In short the ‘Gravity Series’ is charcoal BBQing made simple. It’s as convenient as a gas BBQ, it’s as controllable as a gas BBQ, it’s as efficient as a gas BBQ and it’s as clean as a gas BBQ… but it has all the flavour, fun and personality that only charcoal brings to the outdoor cooking experience.

The whole setup reminds me of an offset smoker, though one assisted by a fanned temperature-control system. It's similar to how pellet grills run too, save that they mechanically feed pellets from their hoppers into a separate fire box inside their cooking chambers. I have a little caution as to how long they will last and how much babysitting they will need.The standout feature of the Masterbuilt 560, aside from its intuitive design, is its ability to control the temperature of the BBQ using a digital fan system found on its underside.
