Cream Cheese – Full fat Philadelphia original cream cheese is the only way to go if you don’t want to be disappointed. It’s the most stable of all the cream cheeses I’ve ever tried and it always sets. (Cheaper/low fat versions don’t!) You can easily make this cake into a Malteser version of the Easter piñata cake, by following the same methods in the Easter piñata cakepost, but filling with Maltesers.I didn’t actually have enough Maltesers on the day of baking this as I might have munched on a few too many, but you get the idea. Whichever way you decide to do this cake, it will be delicious. Naturally, you can also experiment with the cheese filling by adding even more chocolate to it. To be more specific, you can add 2 spoonfuls of Nutella for nice notes of hazelnut.

Pile the cheesecake filling over the chilled base and level using a spatula. Chill the cheesecake in the fridge for six hours or ideally overnight to set. I used malted milk biscuits for the base, you can use digestive biscuits if you prefer, just increase the butter to 135g. I do find it easier to decorate the cake when the sponges have been chilled – just because it is designed to be a delicate cake. You can use the cake from my Malteser Drip Cake for a firmer sponge if you prefer, or even just that recipe because it is also delicious! To make the cake, mix together the baking spread and light brown soft sugar, for 2-3 minutes until fluffy. Then whisk in eggs, milk and vanilla extract. If you can't get hold of the Maltesers Teasers, or don't want to use them, you can use melted milk chocolate instead for the cheesecake filling. Or you can omit the chocolate and add 2 tsp vanilla for a nice flavour. Whip the double cream and icing sugar together to stiff peaks in a mixing bowl with an electric hand whisk.
