It’s that time of year again and this year I have been invited to a Burn’s night supper in a few weeks time. The friends I will be visiting are not great whisky drinkers, preferring fortified wines or Cognacs but they are willing to forego a blended whisky in favour of a single malt. I told them to leave the choice to me to bring along something they might find more in tune with their palates. The distillery, now owned by the Signatory Vintage Scotch Whisky Company, opened in 1825 and is known for the small scale of its production. It is operated by three people and produces just 12 casks per week. The whisky is made using traditional methods and the entirety of the process is done at their beautiful farm setting near the town of Pitlochry. One of the smallest and most picturesque distilleries in the Scottish Highlands , Edradour is a popular brand of whisky that’s regarded for its craftsmanship and artisanal nature. Toasted nuts, brown sugar, oatmeal-like grain, fruity custard and light bits of toffee, earth and char.

As they oversee most of the production processes, when the distilled spirit emerges at the end of fermentation, it is subjected to their discerning judgement, founded on knowledge acquired as a result of years of experience, and from their individual jealously guarded professional wisdom handed down to them from generation to generation. Signatory, founded in 1988, is primarily an independent bottler and is based in Pitlochry. [5] Overview [ edit ] Edradour whiskies vary in style, but usually have sherry finishes and a robust profile. Their flagship 10 year old expression, from their core range, is matured in ex-Oloroso and ex-bourbon casks, resulting in notes of fruit, spice and nuts. Conversely, the Edradour Ballechin 10 Year Old is a heavily peated bottling from their Discovery Range; a range that experiments with different casks, including wine. Guests will be met outside by a member of staff at their allocated time and accompanied into the Visitor Centre. Edradour 10 Years is the flagship malt for the Edradour distillery owned by Andrew Symington who also owns the Signatory Vintage bottling company as well. In addition to their standard Edradour releases they also put out a peated whisky under the Ballechin line which isn’t a totally uncommon practice. Tobermory does the same thing and releases their peated whisky as Ledaig.
