About this deal

This cheese was thought to be a form of cheddar with added cream. The curd was pressed and hung in a small net which caused grooves to form over the cheese resembling pineapples.

These cute bite-sized puffs are delicious served warm but also taste fabulous cold/room temperature. Puff Pastry– for these puffs you will need puff pastry. I like to use ready-made puff pastry for convenience but you can absolutely make your own at home. If the flesh has a small amount of brown spots left (dark eyes of the pineapple), this is ok as they are edible but can be sharp. Using the knife, cut away the skin in a downward motion, hugging the curvature of the flesh as you go. Repeat this all the way around.Flour a fork, and then press around the edges of the veg patties, to seal. Transfer onto a lined baking tray. Brush the dough with the glaze, and then pop it into a preheated oven, and bake for 20 minutes or until golden brown. These curry blends come in different spice levels. I went for a mild one, and then if that’s not spicy enough for you, you can add in a touch of chilli powder. Sri Lankan curry powder would work too! If your pastry has come to room temperature, you can place it in the fridge for 20 minutes to chill it. This ensures a flakier puff when cooking as the layers remain separate. If you’d like to serve them with a sauce on the side, then this green coriander and mint chutney is great.
