As I was passing through my local Foodland the other day, these caught my eye. Partly because I saw my own name (admittedly, with the alternate spelling, but nevertheless) – and partly because of the magic words: “ Turkish Delight”. No surpise the Turkish Delight was my favourite one of all. Even today when we get a box of chocolates, I claim the Turkish delight as my own. I could not eat any more than one or two of them at once . . . they are too sweet, but boy oh boy do I enjoy those one or two. On a cake stand or cake board (or wherever your cake is going to sit) put a heaped teaspoon of butter cream in the middle and position your first sponge cake on top of that. This will anchor your cake in place and stop it sliding about. Some bakers will also use a milk mixture that you have to watch out for. An inquiry into whether they use honey to sweeten the treat is also important if you want your delight to be truly vegan. After an hour, remove the pot from heat and add rosewater (or whatever aromatic extract you like). Stir thoroughly, then add a drop of food coloring. Now for the slightly time consuming bit; using a palette knife spread the rose buttercream around the sides of the cake. I had made brownies in the past filling them with a layer of minty After Eights. That big fat whiff of rosewater – I think that was the flavour escaping, and once gone there was none left.
