These wines are a true labour of love, and are also some of the world’s greatest sweet wines. In Tokaj the harvest is a long, labor-intensive process that begins at the end of August and usually ends in November (though harvesting aszú berries into January isn’t unheard of). There are essentially three types of harvests in Tokaj: the dry wine harvests, the aszú harvest, and the szamorodni harvest. The wine called Eszencia is a wine made entirely of Aszú berries. The grape must for Eszencia is so sweet, it’s practically syrup, making it very difficult for yeast to ferment sugar into alcohol. Aszú berries are macerated for two days until swollen, followed by a gentle press. Fermentation takes place innew Hungarian oak barrels; a slow process which can last up to two months. The wine made its way to the capitals and palaces of Europe long before there were advertising campaigns and marketing slogans to spread the word. Tokaj’s most glorious period was between the 17thand 19thcenturies, when the region’s wines were drunk by royalty and celebrities around the world. The wine was treated as a symbol of Hungary and was often used as a diplomatic tool. In Bordeaux, the weather along the Garonne River is dank enough to produce the same noble rot essential to the wines of Sauternes. In Germany, the Mosel River provides the same conditions that affect Riesling grapes that are now part of the classification of German Riesling. Considerable further investment followed, particulary from French insurance companies, as the Hungarian government privatised the wine industry in search of much-needed funds. The Tokaj legend has grown and grown in its four-hundred years of history, but it was not until 1630, when the greatness of Oremus vineyard was first spoken of. Today, it is the one with greatest universal acclaim. Tokaj has taken on increasingly legendary status throughout its four-hundred years of history. However, the firstmention of the greatness of Oremus vineyard was only in 1630; today it is universally acclaimed.Ageing process is completed in 136 and 200-litre barrels for two to three years and bottled for an additional year. Even those the wines taste incredibly lean, and they’re often aged in neutral oak (in the local Hungarian oak!).
