About this deal

These bourbons lean heavily on wheat in their mash bills. They are famed for their smoothness, as well as their mellow, grassy flavour. Maker's Mark and Pappy Van Winkle are examples of wheated bourbon. Other qualities distinguish bourbon as well, including a characteristic sweetness from the corn, which can be absent in other American spirits such as rye whiskey. These elements also make this wholly unique style of spirit so different from Scotch and other popular types of global whiskey, like Canadian and Japanese whisky. FEW Spirits is an American craft distillery based in Evanston, Illinois, just outside of Chicago. They pride themselves on producing everything from grain to glass; every aspect of the production of their spirits is done by them. They currently produce a range of award-winning gins and whiskies, all using ingredients sourced as local to the distillery as possible. A mixture of the grains listed above are milled and then combined with water and yeast and allowed to ferment—turning it into what basically amounts to a low-ABV beer. This liquid, known as mash, is then distilled, typically twice, in column or pot stills. Once it reaches the appropriate strength, the distillate, known as white dog (or "white whiskey," i.e. moonshine), is put into new charred oak barrels and allowed to age. (There is no minimum length of time the spirit has to be aged, excepting that it must be aged for a minimum of two years to be called "straight bourbon.") Once it is mature, the whiskey is either "cut" with water or bottled at barrel strength. Maker's Mark was the best-selling bourbon in the world in 2022, closely followed by Bulleit, Woodford Reserve and Jim Beam.

Nothing except water can be added. Other whiskies may have colours and flavourings added, although bourbon must be totally unadulterated. Jeffrey Morgenthaler, bartender and co-owner of Pacific Standard in Portland, Oregon, calls it “an absolutely flawless bourbon, and one of the finest examples of American whiskey in the world today.” He also found Woodford to show more complexity than other whiskeys in its price range and emphasizes its excellent value. Awarded a gold medal by the Beverage Tasting Institute in 2014, the FEW Bourbon is a high-rye bourbon from Illinois that uses a “special peppery yeast” to give it a little something extra to bring up the spice level and add a new dimension to the whiskey. It’s also aged in, relatively, young Minnesota oak barrels which it seems lends a peculiar and unique herbal quality to the bourbon that isn’t unpleasant, but it sure is different. Once the liquid reaches between 80 and 125 proof, distillers fill the liquid into a fresh charred oak barrel for as long as they wish. For example, Eagle Rare is always matured for 10 years, though many age for only one or two. Next, the bourbon is decanted, diluted and bottled. The liquid cannot enter the barrel at anything higher than 125 proof (62.5% abv), and must be distilled at no more than 160 proof (80% abv.) [It has] lots of sweet bourbon notes but a beautiful spicy finish.” For the fermentation process, the mixture is stored in a vat for one to two weeks, to fully ferment the mixture.More yeast and the sour mash (leftover mash from a previous distillation which reduces the pH to curb the growth of bacteria) are then added the mixture. Next, the liquids are separated (which have become ethanol) from the leftover solids (new sour mash) and distilled within copper pot stills.
