I love Lebanese food, and was so excited to get this as a present, not really a massive surprise as I must have mentioned it 1245789 times. Dan Lepard is a baker and photographer who has worked with the likes of Ottolenghi, Giorgio Locatelli and Fergus Henderson. You can skip this step but I advice you to leave it in as the smoked flavor adds a lot of taste to the dip.
