In creating Height of Arrows, the distillers sought to create a gin that followed the same principle of utilising a few ingredients to achieve an abundance of flavour. The florals on the nose carry through to the palate, with herbaceous notes on the finish and an enduring spice. Made just down the road, the Height of Arrows gin from Holyrood distillery strips gin to its core, celebrating the flavour and complexity of juniper. We use salt as a natural flavour enhancer, marrying with juniper to impart a further depth of flavour.Mirroring this approach, the aim was to create a gin with a complex array of flavours by utlising a minimal number of ingredients. I have to say it was a fascinating experience and great fun putting so many people on the spot to see and witness their reactions.

It demonstrates the influence of our iterative, holistic approach, who we are as distillers, and where we are going as whisky makers. This bright gin only needs a small splash of tonic, around 1 part gin to 1 part tonic with a sprig of rosemary or a citrus twist. Old Tom gins were sweetened, and we have used this style to round out the deep bold flavours created with roasting the juniper.Lovely fresh notes of grapefruit and lemon zest, which can be enhanced with a garnish of lemon peel, or complemented with a sprig or rosemary. Whisky’s vast array of flavours rely on distillers’ expertise in using just three ingredients, water, barley and yeast.

Drawing on the idea that whisky’s myriad of flavours rely on a handful of ingredients, Height Of Arrows rejects the idea of numerous botanical additions. To create Height of Arrows we have focused our production on gin’s essential botanical, juniper, with each iteration using Juniper in a different way.
