In 1975, Irish Distillers Ltd decided to close its poorly located distilleries in Dublin and open a new one on the Midleton site. The gentle oak tannins enhance flavours of honeycomb dipped in chocolate and creamy vanilla, offering a velvety texture typical of Midleton’s pot still and grain whiskeys. The initial herbal essence, reminiscent of fresh peppermint and sage, mingles with luscious orchard fruits and tangy orange zest.The buildings of the Midleton distillery began life rather abstemiously; used as a wool mill in the very late eighteenth century. This limited edition Irish whiskey pays homage to his extraordinary legacy both in Midleton and the wider whisky community.
