And if you have switched back to white after red, you may be surprised how white wine can cleanse the palate. Sweet muscat is the best bet here whether a vin doux naturel from France or even the island of Samos or a ‘stickie’ from Down Under. It also makes a great gift for a wine lover who enjoys eating Christmas pudding during the festive period. Decadence in a bowl, chocolate mousse’s deep flavours need a wine that can stand up to that intensity but also complement the mousse’s light, airy texture.

Serving Suggestion: Pour into a pan and heat at a low temperature until the wine is simmering gently. It is still dry so needs to be back sweetened but the spices are balanced with the taste of the dried fruit still there. Muscat is also a natural partner to chocolate puddings, so the next time you whip up a chocolate fondant, reach for a glass of sweet muscat to go with it. Don’t overwhelm – Steer clear of very tannic reds, as they have a tendency to pick a flavour fight with puddings and desserts. Not strictly speaking a pudding wine (it’s medium dry in style) but delicious with puddings nonetheless!People often stick to the red wine they have been drinking with their main course when they get to their dessert but this is in most cases a mistake as they soon find out. While, a dark and intensely sweet PX Sherry, such as the multi award-winning Fernando de Castilla Antique Pedro Ximénez, is a fine match for dark chocolate. A creamy dessert, such as a cheesecake or custard tart, might pair better with a wine with a velvety mouthfeel, while a dessert with some crunch could be matched with a sparkling wine. Nobody does it like the French when it comes to Sémillon-based dessert wines, so look to the subregions of Bordeaux – The Château du Seuil Cerons and Château Gravas Sauternes are both sensational options, and also match wonderfully with creamy desserts like crème brûlée, and apple tarts. Of course the sweet wine must have good acidity too as that will also stop the combination seeming OTT; the acidity will cut through the sweetness and make the mouth water. Or, for something completely different, try L’Occhiolino, a unique sparkling Italian red wine with delicate bubbles and juicy red berry notes. Once your kitchen has filled with a Christmas aroma that will make you sing jingle bells, our the must into your sterilised fermentation bucket, top up with water to just over 2 gallons, and allow to cool before pitching in the yeast.
